Frangipane Mixed Berry Tarts

Today was a catch up prep day at the bakery and as a treat I made these mixed berry frangipane tarts.

I handmade the made pastry, but you can easily use store bought.

Frangipane Filling
200 g butter softened
200 g caster sugar
2 eggs
200 g ground almonds
method:
beat butter and sugar until light and fluffy
break eggs into a small bowl and mix with a folk to break up
add eggs in four lots to creamed butter and sugar
add ground almonds and mix to combine
I put my frangipane filling in a large piping bag and store in the fridge until ready to use.
